Ingredients:
Serves 6 ¼ cup portions
¼ pound (1 stick) butter
¾ cup sugar
1/8 tsp salt
3 eggs
1 Tbs whole milk (optional if need more liquid. I always add)
2- 8 ounce cans pineapple tidbits. You can substitute with a 20 ounce can crushed pineapple. Drain liquid before using fruit.
4 slices packed bread

Method:
Preheat oven to 350 degrees. Cream butter and sugar. Add unbeaten eggs. Mix well. Add pineapple to pulled bread and mix. Then butter, sugar, and egg mixture over bread and pineapple mix. Mix well and pour into a greased 1 ½ quart casserole dish. Baked uncovered for 45 minutes. Mixture will have the consistency of bread pudding. It is finished when brown on top and ingredients are well combined.
Note: The reason I do not add bread and pineapple into the electric mixer, is because mixing everything by hand in the last steps, gives this dish a hearty texture. This side dish compliments any meal when ham is served.
